Ugali

Ugali is the most common staple food in Tanzania due to its ease of cooking and affordability. Maize flour and water are cooked slowly until it reaches a dough-like consistency, after which it’s left for a moment to set before being eaten. It is difficult to draw a good comparison, but one could possibly liken it to a cross between polenta and mashed potatoes (maybe).

The correct method of eating is by breaking off a chunk and mashing it into a small ball in the palm of your hand; this is then dipped into your main dish and popped into your mouth. It can be served with almost any main dish but is popularly eaten with nyama choma or mchuzi, a kind of soup or stew. It can be an odd food to get used to but once you do it can be strangely addictive.

Chicken Tikka Karahi – Pakistani Style

After moving to Ireland, I have been experimenting with Pakistani cooking a lot. Back home it was all about enjoying Ammi k hath ka khana (food prepared by my mom) but after moving here as we have to do the cooking ourselves so it’s mostly based on the cravings, which have grown stronger for home-cooked desi food. I miss Lahori food a lot! (apart from family of course) and the other day I wanted to have Chicken Tikka and Chicken Karahi so bad that I ended up making Chicken Tikka Karahi. This recipe has authentic Pakistani flavors of both Chicken Tikka and Chicken Karahi.

Chicken Karahi is one of the most popular South-Asian dishes and is probably one with unlimited versions as every person has their unique way of making it. From restaurants to roadside Shabbas and home cooks each recipe has its own distinct taste and flavor.

Chicken Tikka is another popular dish from the South-Asian region, where Tikka means pieces or small chunks. So, Chicken Tikka is small chicken pieces marinated in spices and yogurt, which are then char-grilled giving it a nice smokey flavor. Chicken Tikka is a dish on its own but is also widely used to prepare other popular dishes like Chicken Tikka Masala, Butter Chicken, and now Chicken Tikka Karahi.

The difference between Chicken Tikka Karahi and Chicken Tikka Masala is the cooking technique and the ingredients. While Chicken Tikka is a constant in both dishes, the cooking method of Chicken Karahi and Chicken Masala is different.

Chips mayai

Yes my French-Fries Lover Friends, you read that right. Breakfast has become a lot more addictive with this Tanzanian special dish Chips Mayai (French Fries Omelette). The sound of it is so tempting in itself, for the not-so-breakfast-kind person like me this is an absolute breakfast treat.

  • When I first came to know about the existence of this dish on a blog that I followI was so tempted by the idea that I had to try it. But, as I’m ME, I had to do some research and had to find out where this dish came from and who invented it, and everything about it. To my surprise, this very simple yet delicious dish came out of Tanzania and it is said to be a very famous dish there. One that you’ll find in every restaurant, and at every corner of the street.

The name Chips Mayai is in Sawahili the national language of Tanzania, where Mayai means Eggs and chips are French Fries so French Fries in Eggs or Eggs in French Fries. They serve it as a snack or street food with a side of some salad they call Kachumbari and Chili Sauce. But I like having it for breakfast and it's so ridiculously good that you’d love it too!

  •  Chipsi mayai is Swahili for “chips and eggs” and is a favourite comfort food in Tanzania. In its purest form it is nothing more than a french fries omelet, but that’s exactly where the beauty lies – in its simplicity. You may also notice that french fries in Tanzania are a little different to the west – always made with fresh, hand-cut and peeled potatoes and fried to a crispy yellow. You’ll find chipsi mayai sold at most eateries and outdoor food stands, and locals usually enjoy eating it with toothpicks and a squirt of ketchup. Breakfast of champions!

Insane food in America

Social scientists have provided many explanations for all that eating, including our increasing dependency on restaurant meals and an ongoing love affair with meat.  But one of the most foundational reasons for all that eating is one of the most controllable

why does America eat insane food? It's called completion compulsion. Coined by University of Alabama psychologist Paul Siegel in 1957, completion compulsion describes an uncomfortably familiar eating habit — that we're more likely to finish what's on our plate than just stop eating because we've gobbled up enough food. ....😘😘😘😘😘😘😘.

The Mayo Clinic says you need to pay attention to three things regarding energy density:

Water. Fruits and vegetables are generally high in water content, which provides volume and weight but not calories. That's why they're low-energy-dense foods. Grapefruit, for example, is about 90 percent water. Half a grapefruit has just 37 calories. Raw, fresh carrots are about 88 percent water. A medium carrot has only about 25 calories.

Fiber. High-fiber foods not only provide volume but also take longer to digest, making you feel full longer on fewer calories. Vegetables, fruits, and whole grains all contain fiber. Popcorn is a good example of a high-volume, low-calorie whole grain. One cup of air-popped popcorn has about 30 calories.

Cooking goat meat

Goat meat is marinated in a flavorful herb and spice marinade, and then slowly grilled, in this ultimate mbuzi nyama choma recipe. This is a very popular dish in East Africa, but especially in Kenya and Tanzania.

making Nyama Choma is not difficult at all and I am happy to let you know that you too, can make your own barbecued meat at home. The marinade is what gives this recipe that extra flavor, That you will Fall in love with. Here is what you will require:

  • Meat: this recipe uses a whole bone-in goat leg (mbuzi) but other cuts such as spare ribs will also do.
  • Vegetables: fresh ginger, garlic, onion, and, bird eye chillis (optional).
  • Spices: cumin, paprika, and stock cubes.
  • Fruit: lemon juice (easily substitutable with lime juice).
  • Condiments: cooking oil and salt.
